Ingredients
l For the Biryani:
- 1 kg chicken (or mutton/vegetables)
- 750 g basmati rice
- 5 medium potatoes (peeled and halved)
- Ghee or oil for cooking
l For the Bombay Biryani Masala:
- Green cardamom (10)
- Cloves (10)
- Black peppercorns (1 tsp)
- Cinnamon sticks (2 pieces)
- Star anise (2)
- Mace (1 flower)
- Shah jeera (1 tsp)
l Other Ingredients:
- Salt (to taste)
- Water (for cooking)
- Fried onions (birista) for layering
- Chopped coriander leaves
- Saffron soaked in warm milk (optional)
Cooking Instructions
1. Prepare the Masala: Dry roast the spices listed above to create the Bombay Biryani Masala. This can be done in advance and stored in a sealed container.
2. Marinate the Meat: Combine the chicken or mutton with yogurt, fried onions, and a portion of the biryani masala. Allow it to marinate for at least one hour.
3. Cook the Potatoes: In a pan, heat ghee and fry the halved potatoes until golden. Add them to the marinated meat mixture.
4. Cook the Rice: Boil water in a large pot, add salt and whole spices, then add soaked basmati rice. Cook until it’s about 70% done.
5. Layering: In a heavy-bottomed pot, layer half of the cooked rice at the bottom. Add the marinated meat and potatoes on top, followed by another layer of rice. Drizzle with ghee, saffron milk, and sprinkle fried onions and chopped coriander.
6. Final Cooking: Cover tightly and cook on low heat for about 20–30 minutes to allow all flavours to meld together.
